Soak the tamarind in water for about an hour and extract the pulp.

Heat oil in a thick-bottomed pan and add onion and garlic. Fry till lightly golden.

Preheat oven at 177ºC. Grease a baking tin with some butter.

Cut the phyllo sheets. Cover with a damp cloth to keep them from drying out.

Grind together the walnuts, sugar and cardamom seeds to an uneven mixture.
