How to make Pear Stuffed Roast Chicken Recipe?
Step 1
Preheat oven at 200°C.
Step 2
Grease a baking tray with some oil.
Step 3
Heat some oil in a pan. Add garlic and cook till golden. Add onion and cook till golden. Switch off heat and cool.
Step 4
Discard stem and bottom of both pears, halve and cut into small pieces.
Step 5
Take chicken mince in a bowl. Add chopped pears. Add cooked garlic-onion mixture and mix well.
Step 6
Add salt, crushed black peppercorns and dried mixed herbs and mix. Add almonds and mix well.
Step 7
To prepare marinade, combine Worcestershire sauce, crushed black peppercorns, garlic, butter, oil and lemon juice in a bowl and mix well.
Step 8
Loosen the skin of whole chicken, put some marinade between the skin and flesh and spread well. Rub marinade over the chicken.
Step 9
Seal the head of marinated chicken using a toothpick to secure the stuffing. Stuff the chicken with ready onion-pear mixture. Push the chicken legs inside and seal the tail. Place the stuffed chicken on the baking tray.
Step 10
Place potato wedges and carrot pieces on the worktop. Add salt, mixed dried herbs and crushed peppercorns and mix. Put the potato-carrot mixture around stuffed chicken and drizzle some oil on top.
Step 11
Place the baking tray in preheated oven and roast for 10-15 minutes. Reduce temperature to 150°C and roast for 1 hour.
Step 12
Serve hot.
