How to make Feta Rice Stuffed Tomatoes Recipe?
Step 1
Preheat oven at 180º C.
Step 2
Cut the tops of the tomatoes and scoop out the pulp. Reserve the tops and pulp.
Step 3
Place the tomato shells on a baking tray, put the tray in the preheated oven and roast. Remove from oven and set aside.
Step 4
Heat olive oil in a pan. Add onion and cook till soft.
Step 5
Roughly chop the reserved tomato pulp and add along with rice, tomato puree and 1 cup boiled water and mix.
Step 6
Add salt and crushed peppercorns, bring to a boil. Reduce heat and cook for 12 minutes.
Step 7
Remove from heat; add the parsley, dill, mint leaves and lemon zest and feta cheese and mix.
Step 8
Stuff the cooked rice mixture into the roasted tomato shells and cover with the reserved tops.
Step 9
Place them on the baking tray, drizzle olive oil and cover with aluminum foil. Put the tray in the preheated oven and bake for 1 hour.
Step 10
Serve warm.
