How to make Gutti Vankaya Koora (Stuffed Brinjals) Recipe?
Step 1
Heat some oil in a non-stick pan. Add half the onion and cook till translucent.
Step 2
Dry roast peanuts.
Step 3
Dry roast sesame seeds
Step 4
Dry roast coriander seeds
Step 5
Dry roast cumin seeds
Step 6
Dry roast coconut
Step 7
Remove from heat, cool and grind together into a coarse powder.
Step 8
Add cooked onion, ginger, garlic and little water and grind into a fine paste.
Step 9
Make a cross on the bottom of the brinjals, keeping the stalks intact.
Step 10
Heat some oil in a non-stick pan. Arrange the brinjals in it and cook on high heat for 2 minutes. Cover and cook on low heat for 12 to 15 minutes. Transfer on a plate.
Step 11
Heat some oil in the pan. Add onion and curry leaves, mix and cook till onions turn golden.
Step 12
Add the prepared paste, chili powder and salt, mix and cook till the oil separates.
Step 13
Add the cooked brinjals and mix well. Add half cup of water, cover and bring to a boil. Cook further on medium heat for 4 to 5 minutes.
Step 14
Serve hot.
