How to make Jaffa Cakes Recipe?
Step 1
Preheat oven to 180°C.
Step 2
Cream together egg and castor sugar till thick and creamy. Add flour and fold it.
Step 3
Grease a 12-hole jam tart mould with some butter and put 1 tablespoon of mixture in each hole. Place the mould in the preheated oven and bake for 10 minutes.
Step 4
Cut each cake horizontally into half.
Step 5
Heat marmalade in a pan till it thickens and is spreadable. Remove from heat and cool.
Step 6
Spread a dollop of marmalade over each cake half.
Step 7
Melt chocolate with orange zest, oil and 1 tablespoon water in a bowl over a double boiler, stirring continuously. Cool it.
Step 8
Spread this over the marmalade layer. Keep them in the refrigerator to set.
Step 9
Serve.
