Step 1
Preheat oven at 180º C.
Step 2
Put pumpkin, half the apples and brown sugar into a blender jar. Break eggs and add to the jar with vanilla essence and oil and blend to a smooth puree.
Step 3
Sift together refined flour, baking powder, and soda and cinnamon powder into a large bowl. Add apples, pumpkin seeds and pumpkin puree and mix well.
Step 4
Pour the mixture into silicon moulds, place them on a baking tray and pour sufficient water in the tray.
Step 5
Place the tray in the preheated oven and bake for 20-22 minutes.
Step 6
Remove the moulds from the oven, remove the muffins from moulds, arrange them on a serving dish and serve warm.
